As you know, I like to keep things as simple as possible, so yes, I made a few changes. I tried my best not to have to go to the grocery store so I used frozen asparagus veggie steamers instead of roasting my own. I also used regular old quinoa instead of the recipe recommended tricolor quinoa. Oh and I totally added craisins, because why not? My salad may not be as beautiful, but this is one recipe I'm going to keep for the future. Maybe next time I'll actually follow it all the way!!
I have been trying to meal prep as much as possible in order to make my life easier. My lunches for the week consisted of this quinoa salad, half a turkey sandwich and some hummus! (I totally dipped my sandwich in the hummus, try it!) I was full and satisfied for a good part of the day. Using these amazing containers from Amazon, my half sandwich stayed fresh all week!
